Madera's Restaurant Review:

Despite its famous exports of cheese, beef and corn, Vermont tends to be a tad short on Mexican joints. Burlington is home to multiple Mexican eateries, and Madera’s stands out from the pack. From its list of inventive, reasonably priced tequilas to the satisfying black bean dip that accompanies each basket of salty corn chips, Madera’s sets out to satisfy with integrity. Handmade tortillas bring tacos and enchiladas to life, but it's the old-world favorites that really excel. Start with a bowl of pollo fundido, a savory blend of cheeses with shredded chicken, roasted poblanos and fresh avocado sized to share. Then dig into the tantalizing pescado borracho ("drunken fish”), which dresses mild-mannered tilapia in a light broth of spicy cream. Purists will go for mole, a rich sauce composed of dried chilies, ground nuts and chocolate. Served over chicken, it’s a flavorful standout. Just remember to save room for flan; the sweet, caramel custard makes for a memorable finish. Before you say "buenas noches" to Burlington, stroll across the street and watch the sun set behind the Adirondack Mountains on the opposite side of Lake Champlain.
