Michel Richard’s enterprise at The Ritz-Carlton, Tysons Corner, elevates the fine dining scene in Fairfax County. True to form, the food is classically simple yet utterly unusual and full of carefully layered flavors. That is thanks, of course, to the culinary genius of Michel Richard and the capable execution of his executive chef, Jon Mathieson, formerly of the now-closed Inox. Breakfasts are appetizing day-starters, and range from blueberry pancakes to Michel's smoked salmon plate. Dinnertime might start off with chestnut soup with hedgehog mushrooms, before launching patrons into such entrées as shrimp porcupine with Israeli couscous, mustard rabbit, beef bourguignon, and 72-hour braised short ribs with garlic mashed potatoes. Thanks to the pastry chef, desserts are splendid, and might well include Michel's napoleon and the cocotte vacherin.
