At Montreal's best-known steakhouse, the house-aged beef with deep-fried onion rings has inspired customer loyalty --- some chairs even have owners’ brass plaques. The old-time waiters not only know your name, they know your birthday. A dining room renovation and special two-course late-night (9 p.m.-midnight, Wed.-Sat.) $29 menu brings in a younger crowd of steak lovers and soon-to-be restaurant devotees. They're won over by the skillfully cooked filet mignon, sirloins, rib-eyes and T-bones, and by the fact that they have to order sides of spinach, sautéed mushrooms and creamed corn separately --- this meat doesn't need arm candy.
