Philippe Padovani has been associated with this specific restaurant space since ’Elua opened, then morphed into Sapori under his partner at the time, Donato Loperfido. Sapori closed, but the space remained. Calling upon his experience at what was then The Ritz-Carlton, Mauna Lani, Padovani determined that a simple steak, seafood and well-executed sides concept just might be the right fit. Look for tenderloin of beef with Dijon mustard herbs sauce, and pan-sautéed rib-eye complemented by green peppercorn and sweet corn sauce. Seafood, confit of Muscovy duck leg and a veal chop with Périgueux sauce are among beef alternatives, and chef Padovani offers a vegetarian menu as well. Big Island-grown Hamakua mushroom fricassée makes a good side.
