THIS ESTABLISHMENT HAS CHANGED NAMES Executive chef Peter Hahn is doing double duty; he's also now the restaurant's general manager, a move that has taken him out of the kitchen and onto the dining floor. But his longtime chef de cuisine, Michael Colling, has stepped up and is putting his signature on the Raphael menu. Unquestionably, this is one of Kansas City's most romantic restaurants, tucked in the lower level of the hotel and smack in the center of Country Club Plaza. The signature rack of lamb served with white truffle oil-scented risotto remains, but Colling revamped the remainder of the menu. Additions include Kobe beef sliders with caramelized shallots and house-made cherry ketchup as well as grilled prawns over Asian slaw with a spicy pepper coulis. The monthly themed prix-fixe dinners are no more, and the bar and happy hour menus are expected to change as the hotel’s renovation progresses.
