Food & Drinks: The Pheasant sources seasonal ingredients from local farmers and fishermen, so menus frequently change throughout the season. Guests might encounter such dishes as raw local dayboat scallops with rhubarb aguachile; pan-roasted local fish with kohlrabi, sea lettuces, scallions and dashi; and braised beef cheek with polenta, mushrooms and shaved horseradish gremolata.
