Rusty's Bistro Restaurant Review:
Rusty's Bistro is the signature restaurant of this upscale, Gulf-facing hotel resort. Breakfast offers a standard buffet but also off-the-menu breakfast pizza and crêpes. The reason to visit Rusty's, however, is for the creative dinner menu, rarely exactly the same each night. Most popular is the nightly prime rib buffet with an assortment of chef-chosen sides along with soups, salads, potatoes, rice, pasta, vegetables and fresh fruit. On Saturdays, the prime rib accompaniments focus on seafood. But ordering off the menu provides some nice, if standard, appetizers, such as baked Brie (lent panache by a macadamia nut crust, mixed berry marmalade and pumpernickel croutons) and Maine lobster ravioli. Entrées tend to be more inventive: ahi comes with a citrus-herb rub, field greens, mango vinaigrette and peanuts while the shrimp-and-crab-stuffed salmon features a zingy blood orange hollandaise and an unusual basmati-quinoa blend. Another fresh surprise is the red curry trout, offered with gingered paella and a mango butter sauce. Desserts include Rum & Coke cake or bread pudding with pomegranate caramel sauce.
