The setting is plush, and the floral arrangements are so grand they appear faux. When it comes to the food, things get even better. Executive chef Kevin Hickey produces fanciful creations with a strong emphasis on fresh ingredients. The menu at the hotel-centered place changes with the weather, so ready yourself for butter-poached Columbia River salmon smoked “à la minute” and served with smoked American caviar and scallion mousseline one visit. The next, you may find hamachi crudo with green papaya salad, black garlic and mango coulis. Desserts are no less exciting; sheep’s milk yogurt ice cream and raspberry gelée is a great choice when on hand. In addition to several daily heart-healthy dishes, you’ll find various multi-course tasting menus, an extensive wine list and polished service. Interestingly enough, the restaurant is quite kid-friendly, with a very special menu catering to tots.
