Tex Wasabi’s Rock-N-Roll Sushi-BBQ in Santa Rosa is a bizarro but provocative collision of sushi and Southern Q. Why flip a coin for unagi versus brisket when you can order both? Pop plush pork “sliders,” a trio or a dozen, then conquer the smoked ribs and chicken platter. Or take a more ethereal route with hamachi nigiri or a spicy tuna inside-out roll. The fusion here gets a little dicey, as in the Cajun chicken club wrapped in sushi rice or the barbecued pork, avocado and french fries roll. But it’s all about being fearless and having fun, as embodied by the youthful throngs and staff. Wash it all down with a wild cocktail from a vast list, including party-size “bowlas,” or a bargain bottle of respectable wine.
