Los Angeles transplant Paul Zarate was tired of not being able to get a decent soft taco in his adopted home, so he made his own --- and launched his Zaratez Mexicatessen converted van. And Honoluluans are grateful. He roasts tomatoes to make his own smoky salsa and turns out mulitas topped with chorizo, carnitas, citrusy chicken and lots of cilantro. The sometime DJ started training with his abuela since his was eight --- and it’s clear she taught him well.
