While other chefs have been swept away by the tidal forces of the fusion food trend, William Ledeuil is the only chef in France who still rides atop the wave with great success. In the setting of a contemporary art gallery flowing into an open kitchen, Ledeuil has achieved a refined French cuisine, blending tradition and modernity with Asian flavors. Dishes we've encountered included polenta with asparagus, ham, rice crumbs, caramelized cashew nuts, orange sauce and coconut milk; cuttlefish with red onion, small olives, Thai basil, coconut milk, shellfish and langoustine broth; and baby lamb chops with mushroom, broccoli, asparagus, olives, capers, broccoli and olive purée. The confit citrus, lemon cream, clementines and lemongrass ice cream release a very delicate harmony of tastes, textures and flavors.
