With its adroit mix of nightclub-bistro atmosphere and fine dining, 10 Prime Steak & Sushi would be perfectly at home in New York or Boston. Eye-catching pendant lighting and curtained and backlit partitions have become almost de rigueur at spots like this, but 10 Prime spices it up with salsa music, curvaceous statuary and fresh flowers in tiny glass vases hanging from cast-iron railings. Service is casual but professional, providing friendly guidance to a pricey and comprehensive wine list and dinner menu that gives nearly equal weight to beefy entrées and creatively designed sushi and seafood. Warm and smoky Sho Chiku Bai saké is a mellow accompaniment to designer sushi rolls filled with crab and shrimp and topped with cooked lobster and sevruga caviar. A "screaming" salmon roll strays even further from the traditional fish and rice, rolled with avocado and spicy miso and sprinkled with tempura crunches and flying fish roe. Following this flavor and texture explosion, it's nice to settle in with a glass of Solaris Cabernet and an aged sirloin --- juicy and flavorful, if a bit fatty around the edges. À la carte sides include chunky au gratin potatoes. The dessert menu gets a touch of whimsy from 3D glasses: place your order early for the apple-berry cobbler filled with firm fruit and topped with homemade vanilla ice cream; its shortbread crust is redolent of butter cookies.
