The focus is on the garlicky foods of southern Spain with their Mediterranean influences. Lamb, chicken and seafood dishes, some splashed with golden olive oil, are particularly good, especially the chicken al ajillo, flavored with loads of garlic and sherry, and the red snapper baked in rock salt. Another good choice: Seville-style duck with green olives, ham and dry sherry. Enjoy the crusty breads and be sure to indulge in some of the well-chosen wines. Flan is a good choice for dessert.
