Andre’s Bouchee Restaurant & Wine Bar Restaurant Review

: Experience a little bit of France on the Carmel coast. Chef Andre Lemaire prepares bistro cuisine with California inflections, served in a golden-hued dining room with equally warm service. For lunch, the French onion soup boasts nicely caramelized onions; the croque monsieur is a textural showcase of creamy cheese, crisp exterior and succulent ham. Dinner offerings start with an escargots appetizer with a shallot demi-glace studded with hazelnuts atop puff pastry. A duo of salmon --- tartare tossed with olive oil and shallots and wrapped in smoked salmon --- is bathed in a chive-cream sauce laced with lemon. Alaskan halibut is paired with another lively chive sauce; a braised lamb shank comes with a novel-yet-familiar lime and maple syrup reduction. For the denouement, order the coulant aux chocolat et Carambar, chocolate cake with a molten center of chocolate and Carambar (French caramel candy) with a glass of Grenache.
