Santa Fe-inspired décor accents a sprawling dining room done in orange, blue and green, while Anchos’ kitchen focuses on bright, fresh flavors in classics like fajitas, fondue-like melted cheeses topped with chorizo, grilled skirt steak and costillas (pork ribs with a homemade ancho chile barbecue sauce). A mesquite grill enhances meats, as well as bacon-wrapped jumbo shrimp. Tortillas, made on the premises (albeit in a machine located in the center of the dining room), are quite respectable, and the margaritas keep folks happy. For dessert, the ancho fudge pie is decadent, while the homemade flan is a lighter alternative.
