You order at the counter from a long list of fillings that include pollo asado, red or green mole, shrimp, carnitas, and the lighter but equally flavorful vegetables asados, a combination of grilled squash and seasonal vegetables marinated in garlic and white wine. The tortillas are lard-free, the chips are fried in safflower oil, and the meat is from high-quality purveyors like Fulton Valley and Niman Ranch.
