Couvant at The Eliza Jane adds New Orleans flair to French brasserie cuisine. Expect dishes like Gulf fish crudo, crawfish gnocchi and brioche crusted veal with crushed potatoes, mushrooms and sauce diable. Executive chef Ryan Pearson is a New Orleans native who most recently served as sous chef of Daniel in New York.
