Cowboy Ciao has it all --- a mix of young and hip chefs, wine experts and a promotional staff that make the restaurant a place to see and be seen. Over the past two decades, quality and innovation have settled down, and there aren’t many surprises. But the kitchen still does a commendable job with the signature exotic mushroom pan-fry with cremini, button and oyster mushrooms in ancho cream over double-cooked polenta with grilled portobello mushrooms, avocado, tomato and cotija cheese. The same is true for the buttermilk/sambal-marinated chicken fried trout and the pastrami-style short ribs. The restaurant is also known for its chopped Stetson salad, seasonal plates like elk with risotto and pesto, Mexican pot de crème and bread pudding. In addition to boasting a notable wine list, Cowboy Ciao soars with its innovative wine flight program.
