La Cantera Hill Country Resort, dominating a hill that overlooks golf courses, the Fiesta Texas theme park and an upscale shopping enclave, is a citadel of conspicuous consumption. But that consumption centers on unpretentious local produce in a partnership featuring community supported agriculture and local ranches. Few echoes of former consultant Mark Miller persist, but King Ranch goat and pork albondigas (meatballs) forge a tradition all their own; seared scallops are adorned with Valley citrus; and chile- and coffee-charred beef tenderloin is served with a local pea purée. Look, too, for entrées such as brined organic chicken with a mescal-ginger vinaigrette, a catch of the day with cilantro salsa, and venison leg loin marinated in cherry, vanilla and chipotle. Servers are well-trained, and the wine list offers plenty of bottles with the moxie to match full-throttle foods. The informative sommelier’s recommendations are highlighted within the voluminous wine list, in which wines, many from Texas, are arranged by style.
