Tucked away on the fourth floor of Ngee Ann City, one of Singapore's swankiest malls, this restaurant makes a grand first impression with its marbled reception area leading to cozy nooks with banquettes and a white-and-red beaded dining room with dark wood panels. The draw is refined Teochew food, a cuisine emphasizing steaming, braising and poaching that originates in ChaoShan, China. Shoppers nip in during the day for dim sum: light, fluffy char siew bao (barbecue pork buns), and xiao long bao pork dumplings in soup. Other satisfying classics include the har gow and shrimp siew mai. Baked egg tart arrives at the table fresh from the oven. Roast pork is distinguished with its crispy skin and palate-melting fat; follow it with steamed pomfret fish with tomatoes, plums and salted vegetables topped with Chinese celery. Imperial Treasure’s 100-label wine list balances old- and new-world bottles. Sweetened mashed taro with gingko nut ends this Teochew meal on a traditional high note.
