As expected, the menu at Pho Van in Beaverton includes many variations of pho, all based on a deeply aromatic and rich broth. Protein options include medium-rare round steak, meatballs, tripe, chicken and vegetarian (tofu, mushroom and bok choy). Try the crispy salad rolls with peanut sauce.
