About the restaurant: Sabio on Main is tucked demurely behind a Starbucks, but it’s quite formal and expansive once entered. After-work patrons unwind at the busy bar, the conversational murmur growing as tables and booths fill and waiters maneuver to introduce artful tapas to eager diners.

Food & Drinks: Chef Francis Hogan applies serious intent to playful dishes, and artisan cocktails heighten the experience. The Dirty Cougar (grapefruit vodka, St-Germain elderflower, fresh lemon) may carry one from an oyster resting on gazpacho with avocado mousse, past peppery deviled eggs speared with crispy manchego, and through to pork belly wraps dressed up with salmon roe, jaunty chicken, chorizo and cider-braised leeks in green-apple purée. Roasted corn, butter beans and cherry tomatoes were met with a soft smear of house-made chèvre Boursin and a line of crunchy, nutty, corny crumble. A wall of carefully curated wines next to showcased charcuterie inspires further tasting and pairing. Desserts include a deconstructed dark chocolate cake with nibs, Chantilly, hazelnut brittle and a scoop of vanilla ice cream.
