Former Rosewood Mansion on Turtle Creek chef John Tesar dazzles the city of Dallas once again with this elegant Preston Center restaurant showcasing sustainably sourced seafood. Tesar demonstrates a deft hand with raw preparations with an entire menu section devoted to crudos, including a delicate cuttlefish spiced up with jalapeño vinaigrette and pink peppercorns. The most adventurous palates should dare to try the unusual smoked sturgeon headcheese, but gently seasoned Singapore-style chile lobster with house-made Texas toast, or Tesar's creative twist on surf ‘n’ turf with bacon-crusted bone marrow and sea urchin will satisfy the entire table. Even those who shun seafood will find something to savor, like the handmade penne with black truffle essence. Pastry chef David Collier ends things on a sweet note with memorable modernist desserts like The White Album with coconut tapioca and tropical ganache.
