Fine French cooking and a cozy café ambience have arrived in Madison at Bar Bouchee. The intimate restaurant boasts a solid culinary pedigree thanks to its owner, Union League Café’s chef/owner Jean Pierre Vuillermet, and his executive chef David Borselle. Poached Arctic filet, a kirsch and white wine-laced cheese fondue Savoyarde for two, and red wine braised beef over polenta are some of the daily chalkboard-posted specials you can relish at this “bouchon.” Charcuterie, artisanal cheeses, chicken and truffle sausage and classic escargots, rich and creamy butternut squash soup topped with a soupçon of fresh green apple, and French classics including beef bourguignon with gratin dauphinois are menu staples. The specialty martini features fresh squeezed blood orange juice with vodka and Cointreau, while desserts include profiteroles with warm chocolate sauce, coupés glacées with coffee and chocolate ice cream and mocha sauce and vanilla chantilly, and crème caramel and fresh raspberries. Vuillermet appreciates fine wine and offers diners an interesting selection.
