Chicago’s decade-old Bin 36 entered a new era---ushering it in with an almost entirely different menu (don't worry---the killer black pepper-crusted swordfish remains). Its cheese program, already first-rate, expanded; now, lovely artisanal finds range from ultra-creamy, lemony burrata from Italy to nutty goat from Oregon and Tumbleweed's cave-aged raw-milk cow from New York. Communal plates dominate the remainder of the menu, and you must begin with a basket of the pillowy, house-made Parmesan gougères with truffle honey. Charcuterie, including house-cured duck prosciutto, is prominent. But we don’t want to choose between that and the luxurious, egg-topped steak tartare with root vegetable chips. There are entrées as well, from lobster shepherd’s pie to a fine brown sugar-cured pork chop with Gorgonzola polenta. Everyone can manage to squeeze in the light-as-air lemon soufflé with frazzles of candy. As for the wine list, it remains among the best in the city, with affordable boutique choices and house-label wines by the flight, bottle and pours.
