THIS RESTAURANT IS CLOSED Bistro Moderne Restaurant Review: This restaurant in the hip Hotel Derek tastes like a keeper. The glamorous streamlined design in rich chocolate-brown, turquoise and green accents will keep pace with the most savvy of travelers. When it's time to eat, we like such dishes as the goat cheese ravioli in parsley froth; beet salad with a rich blue cheese and avocado vinaigrette; and sliced flank steak in red wine-peppercorn sauce. Seafood dishes include a nicely cooked whole Mediterranean sea bass. Desserts are impressive and the French-pressed coffee is serious stuff. If you forget to make a reservation, the kitchen-side counter offers seating with a bird's-eye view of the culinary action.
