As if Brad Kilgore wasn't busy enough minding his Wynwood restaurant Alter, he has taken on the title of culinary director at the cultural Adrienne Arsht Center for the Performing Arts. In this role, the talented toque is in charge of curating the Arsht Center's food and beverage options, beginning with the on-site restaurant, Brava by Bradley Kilgore. To help him in the kitchen when he can't be in two places at once, Kilgore has solicited Toscana Divino's Jeff Maxfield. An à la carte menu features "food with no boundaries" with French techniques and presentation. Whipped clam chowder elevates the archetypal thanks to black truffle butter and Floridian clams whirling in the airy celery and potato purée broth. Caesar salad, too, gets upgraded, by way of bottarga, Grana Padano and young artichokes. Poulet rouge takes the lead among the entrées due to its 24-hour preparation that includes a popcorn-infused hollandaise and using farce to stuff the chicken, as well as rosemary and preserved lemon. Celeriac "steak" is a more than adequate vegetarian choice, though there's also dry-aged rib-eye with brown butter bordelaise for two to sate carnivores. Soraya Kilgore is responsible for the sweets, namely a chèvre cheesecake finished with Morello cherry and tarragon. Brava opens on performance days with seatings for evening and matinee showings, as well as post-curtain seatings for those without tickets at 8:15 p.m. Don't have time to eat before the show? You can still get a taste of the chef's food at concession stands or throw your next event here and have it catered by Kilgore.
