With 50 wines by the glass and 180 wines by the bottle, it’s Bacchus’s favorite Amsterdam hotspot. Using a high-tech “Enomatic System” to keep the wines in tip-top shape (something having to do with a vacuum and a bit of nitrogen), Bubbles & Wines has wisely chosen to feature little nibbles that heighten your appreciation of your chosen vino. Maybe that’s paddlefish caviar served on addictive little blini with a dab of crème fraîche, or crisp bruschetta spread with a tuna crème and topped with zingy caper berries. Selections of cheeses and charcuterie (head for the duck rillettes) round out the bill, with a few diminutive cakes to pair with the evening’s last glass of bubbly.
