Al Sternweiler (ex-Harvest on Huron) takes a burger concept and butcher shop to the next level, starting with a slew of burger options, from traditional Prime to grass-fed beef, cube steak, La Pryor farm pork, elk, vegan veggie, salmon and even shrimp. For the bun, choose from the popular pretzel, brioche or wheat, or go lo-carb with a lettuce shell. Optional spice blends also run the gamut, from curry-coconut to super-hot ghost pepper. Add some artisan cheese and a fried egg, griddled mushrooms or indulgent extras like black truffle aïoli or foie gras. Thicker, hand-cut fries made from heirloom Kennebec potatoes, Mexican coke and chunky Oreo custard round out the meal, which is served on wooden cutting boards. Come back in the morning for New Orleans-style chicory coffee and hot, homemade beignets. Old-fashioned, iron-clad butcher’s tools, hanging racks and a vintage locker alongside retro Coca-Cola signs lend an old school-meets-new school feel. A small take-out cooler displays sophisticated meats, from high-end bacon to charcuterie, while offering special-order suckling pigs.
