Cache Cache Bistro Restaurant Review: This Provençal bistro in the central core of Aspen is one of the most relaxed and lively in town. It’s always jumping, but it is not a chichi scream scene---except in the noisy bar where the inexpensive bar specials draw beautiful local women of all ages and the men who’ve discovered where to find them. However, this isn’t an especially romantic destination---more a place for family and friends to dine and spot each other across the well-lit room. We always order the veal osso buco when feeling the need for stick to your ribs home cooking on a cold night, or one of the innovative vegetarian specials. We also enjoy the foie gras terrine with berry preserves, pork tenderloin sided with au gratin potatoes, calf’s liver and rotisserie chicken with pommes frites.
