| Café Pasqual's has long been a local favorite and its chef and owner, Katharine Kagel, has become the stuff of Santa Fe legend. Café Pasqual's was one of the first to blend traditional Mexican cooking with the flavors of Asia and also one of the first to make a commitment to use only organic eggs and naturally-raised beef, pork and chicken and line-caught fish. One popular dish is the salmon burrito with goat cheese, cucumber salsa and black beans. Another outstanding salmon dish features the fish wrapped in green banana leaves with green papaya salad and sticky coconut rice. The flash-sautéed Vietnamese squid salad with tamarind, mint and tomato over bitter arugula seems to burst with flavor. Desserts change daily but a perennial favorite is the Killer Chocolate Cake. |
