Renovated in 2002, the Ilikai, that old standby at the gateway of Waikiki, now looks like a sleek boutique operation. And the hotel's casual poolside restaurant, Canoes, has contemporary food to match. Sit indoors with a view of the Ala Wai Yacht Club or sit outside on the torch-lit patio for chef Chip Hawkins' Hawaii Regional dishes such as kalua pig nachos (won ton cups filled with satisfyingly smoky pork), impeccably fresh ahi prepared three ways (seared, raw and as tobiko-topped poke), sweet and barely-seared scallops in a nicely tart guava-tamarind sauce, gingery steamed monchong and sliced duck breast seasoned with Chinese five spice. Being a hotel restaurant, Canoes is open for breakfast, lunch and anytime snacks, too. Spread the word, Canoes isn't just for Ilikai guests.
