The Cantina serves hearty portions of flavorful cuisine in a relaxing Mexican garden-like atmosphere. Colorful chips with bean and salsa dips welcome guests at each table, while appetizers such as coctel de camarones---jumbo shrimp with spicy tomato salsa, avocado and fresh lemon---are turned out in the open kitchen shaded by a thatched roof-style awning. The choose-your-own combo dinner consists of two, three or four items selected from among chile rellenos, tamales, quesadillas, enchiladas, tacos and burritos served with Mexican rice and refried beans. We like the traditional chili verde, pork shoulder slow-cooked in a mildly spicy tomatillo sauce, and the carnitas of pork roasted in beer then shredded and served with guacamole and pico de gallo. Among other appealing entrées is the exotic fajita platter of chicken, steak and shrimp flamed tableside with tequila and accompanied by pico de gallo, guacamole and sour cream. The flan is a refreshing sweet finale, as is the flambé ole---mango and guayaba in a caramel liquor sauce flamed at the table---and served with vanilla ice cream.
