Caribbean Jack's Restaurant Review: Caribbean Jack's enjoys a glorious location right on the Halifax River with a deck extending the huge and colorful dining room right over the water. One can watch boats docking while waiting for the appetizers. The name says it all: the food is Caribbean, such as gator bites with Creole mayonnaise; coconut crunch shrimp; the Caribbean Harvest with shrimp, scallops, calamari and grouper with corn, artichoke hearts and apples, served over bowtie pasta; sweet jerk ribs; and Martinique mahi mahi. We prefer the more natural simply grilled fish. All seafood, and not only the latter, is remarkably fresh.
