Central is proof that at least one big-name chef is not afraid to open a 24-hour eatery on the Vegas Strip. Michel Richard gained notoriety with his well-situated Central in D.C., and his Vegas version is also located in prime real estate, the main lobby of Caesars Palace. A lively atmosphere prevails, with seating for more than 300 and opportunities for people-watching available in the bar, with a view of the lobby, and an outdoor patio area overlooking the entryway into Caesars. Floor-to-ceiling wine racks display bottles from France, Spain, Italy and California; stacks of colossal white plates that mirror the serving dishes add to the décor. The signature Central breakfast is a feast --- three eggs any style, sausage, bacon, ham, mini pancakes and hashbrowns. For a lunch or dinner starter, we suggest the bacon and onion tart --- thin pizza dough topped with sweet onion, bacon and crème fraîche. Crowd favorites are the burgers, with versions of beef, chicken, meatball, crab, ahi, lobster and lamb. A side of mac ‘n’ cheese made with American, cheddar and Monterey Jack is a meal in itself. Save room for the chocolate bar --- a wafer topped with mousse, dark and white chocolate pearls and praline sauce.
