Fervently French and fashionable, Centre V, the Parisian brasserie at The Arrabelle at Vail Square, is the village's upscale hot-spot for truffled pomme frites and fruits de mer. Modeled after Brasserie Lipp and La Coupole in Paris, the restaurant’s lively surrounds echo what habitués would expect to find in a contemporary brasserie: exposed red brick walls; soaring, vaulted ceilings; burnished woods; convivial conversation; a bustling kitchen; boutique French wines; and a shellfish shucking station for voyeurs of oysters. Executive chef Douglas Dodd is at the forefront here, turning out quintessential French and Mediterranean dishes like poached lobster bisque, saffron-scented zuppa di pesce, Moroccan roasted chicken with dried fruit and couscous and carpaccio of buffalo tenderloin. Portions, which are large, are conducive to sharing, desserts are diabolically rich, and the slope-side patio is an ideal way to commune with friends while checking out Vail's head-turning ski scene.
