Part of the Kaiser Restaurant Group portfolio, which operates several concepts throughout the desert, The Chop House has two locations --- one in Palm Springs, the other in Palm Desert --- and offers a straightforward, time-honored version of fine dining. The setting is handsome, the steaks well prepared, and the wine list impressive. Non-carnivore dishes worth mentioning include the Medjool dates stuffed with blue cheese, wrapped in prosciutto, baked, then drizzled with a balsamic glaze; escargots bourguignon served with garlic parsley butter and a splash of Pernod; and the solid seafood risotto.
