True Caribbean cuisine is one of the inspirations for the fusion trend we find so prevalent in today's American dining scene. Caribbean intermingles Chinese, Indian, African, Latin American and indigenous island cuisines---all wrapped up into one tasty package. At Christine's, the East Indian roti, a plump, savory flatbread, is wrapped around wickedly piquant curried goat and jerk chicken (with bones) or vegetarian curries. Choose also from seafood, oxtail or chicken stews and sautés, all complimented by hot-off-the-griddle roti. Delicately spiced lentils with rice accompany many of the offerings, all listed on a makeshift menu perched over Christine's tiny open kitchen.
