Copley's on Palm Canyon Restaurant Review: The building that houses Copley’s was once owned by actor Cary Grant, but that’s not what necessarily makes it so intriguing. Co-owner and chef Andrew Copley gets credit for that. He offers a menu that draws on his many years spent on the Hawaiian Islands. Specialties include ahi tacos in a sesame-miso shell that puts an unexpected and pleasing spin on an old favorite. Succulent lobster potpie, which combines the delicacy of the crustacean with the sweetness of peas and baby carrots, presents its contents in a fragile puff pastry pouch. Copley makes his own herb-infused ice creams: a trio of tarragon, basil and Grand Marnier composes a satisfying end to the meal. If you arrive early enough, you’ll witness the kitchen staff plucking fresh produce from the herb and vegetable beds tended by Copley and his wife, Juliana.
