Coyote Flaco Restaurant Review: The name means "skinny coyote," and this restaurant takes its lean cuisine seriously. Using only olive oil, the kitchen charcoal-broils its meats and pairs them with generous helpings of vegetables; to precede them, chorizo stewed in fresh cactus juice makes for a mighty appetizer. While the overly chocolaty chicken mole disappoints, the roja enchilada and roast pork taco are full-flavored for all their healthiness.
