Coyote Flaco Restaurant Review: The name means "skinny coyote," and this restaurant takes a light approach to authentic Mexican cuisine, using olive and other healthier oils and pairing charcoal-broiled meats with generous helpings of vegetables. Chorizo stewed in fresh cactus juice and chipotle sauce makes for a mighty spicy appetizer. While the overly chocolaty chicken mole disappoints, the roja, suiza and Oaxaca enchilada trio and roast pork taco are full-flavored for all their healthiness.
