: Guests are immediately welcomed to Easterna with a small dish of peanuts and fried scallion bits. In addition to items common to almost any Chinese restaurant, Easterna has a chef's selection of traditional Hong Kong-style entrées. Dishes range from tofu flowers (steamed or fried, stuffed with shrimp paste) to whole flounder cubes over garden vegetables. A glance at the fish tank at one side of the room assures that the whole tilapia is fresh. At lunchtime, most of the Hong Kong-style dishes are not served, but as ordinary an item as sesame chicken becomes extraordinarily good here: Tender chunks of white meat are barely dusted with breading and cooked just crisp at the edges, still juicy inside, and served with a rich, mahogany-colored sauce. From the small menu of dim sum served all day we suggest salt-and-pepper squid, shu mai (steamed shrimp and pork dumpling) or steamed pork roast bun. More adventurous eaters might choose the chicken feet with black bean sauce or cold jelly fish. Crystal coconut custard dumplings from the dim sum list are a perfect way to end the meal.
