| El Corral knows all about beef---big, hearty, Western beef, that is. The star of the show is the prime rib, which comes in four cuts, none of which are frugal. Steaks range from a petite filet to a bone-in rib-eye. And, of course, no ranch house restaurant would be complete without barbecued baby-back ribs. If everyone at the table agrees to the same salad dressing, the table-tossed salad is also a treat with its mix of croutons, sunflower seeds and cheese. As a side dish, we recommend the famous tamale pie, a moist cornbread flecked with chiles and cheese, although for the traditional diner, a baked potato is there for the asking. |
