El Mirasol Restaurant Review: Chef Felipe Castaneda, a native of the small ranching town of Tepechitlan, Zacatecas, an area with a proud culinary pedigree, has enjoyed a loyal local following for nearly 30 years. Castaneda devotees enjoy authentic versions of Mexican standards such as chile verde, shrimp pipian, and pollo en mole poblano, the restaurant’s top selling dish. We also recommend the traditional chicharron, crispy pork rinds in a tomatillo sauce. Plenty of heart-healthy dishes are available, too, including some vegan options like the tasty spinach enchiladas. Ask about specials that aren’t on the regular menu.
