Explorers Restaurant Review: Posh, whimsical Explorers Lounge --- now called, simply, Explorers --- has been elevated to the position of the Royal Sonesta Harbor Court’s top-tier restaurant. The clubby British-Empire-hunts-the-big-game décor, so ideal for late-night cocktails, jazz, and watching the harbor lights, now creates a romantic setting for a leisurely lunch or a big-ticket dinner. Settle in to your faux-leopard chairs for small plates of such “international comfort food” as fried oysters and grits, chicken wings with honey from the hotel’s own apiary, or sea scallops carpaccio. Oysters are a good choice; for each oyster order the restaurant makes a donation to the Chesapeake Bay’s oyster recovery program. Entrées emphasize such Maryland perennials as crab cakes and pan-roasted rockfish, but even the classics are tweaked a bit for culinary explorers. (Ever had a slider made of ground chicken with African spices? You can here!) Round out the experience with one of the house’s collection of single-malt scotches and premium Cognacs.
