 Firebox Restaurant Restaurant Review: Food tastes best at its freshest. It's as simple as that. This inventive Parkville spot in the former Billings Forge plant embodies this philosophy. What began as a work in progress has blossomed into a "must" for those who are fans of farm-to-table dining. The menu is a welcome moving target that is constantly being revised and refined to take full advantage of the flavors of the Connecticut seasons. Poached local farmer's eggs with duck confit, honey-roasted organic chicken and hand-cut pappardelle with sweet roasted local peppers are just some of the offerings that, thanks to attractive presentation, sometimes seem too pretty to eat. Executive chef Sean Farrel is creative and bold when it comes to his kitchen creations, but always mindful of the restaurant's commitment to fresh and local. |
