Food tastes best at its freshest; it's as simple as that. This inventive Parkville spot embodies this philosophy to a T. Something of a work in progress, the menu is constantly being revised and refined to take full advantage of the flavors of the Connecticut seasons. A less daringly contemporary menu might be overshadowed by the dynamic interior---spacious and highly stylized---in which it's served, but Firebox's cuisine can't help but register. Here's hoping the appetizer of lobster pierogies will become a mainstay; we also like the sea scallops---pan-seared and panko-crusted, they are at once crispy and tender, and balanced by the autumnal earthiness of cauliflower, chestnuts and a warm beet dressing. It should be interesting to watch the restaurant's evolution over the (we hope) years to come---though for its thoughtful service alone, it merits plenty of return trips.
