Fish in Truckee once meant fish sticks, but no more. According to the folks at Fish Station, their seafood is sourced from suppliers in San Francisco, Hawaii and Alaska, and much of it appears on the approved list of the Monterey Bay Aquarium's Seafood Watch program. Spearfish (similar to marlin) might be offered one day, or jumbo prawns, or ahi composed of thick red whorls. Most of Fish Station's beef, and all of its chicken, lamb and game, were raised without hormones or antibiotics, according to the menu. Texas quail is available sometimes, or buffalo rib-eye from Wyoming. For a quick seafood fix, fork into single-serving containers of seasoned squid or seaweed salad.
