| Canada-born Hugh Acheson has grown increasingly comfortable with the Southern larder. His low country boil, a dish originating on the Georgia and South Carolina coast, aka the Low Country, departs somewhat from the traditional dish as it uses a light tomato broth. Otherwise, his interpretation assembles the standard ingredients, namely Georgia shrimp, cob corn, spicy sausage, and fingerling potatoes (a high-toned touch) combined in the broth, which you’ll want to lap up. Local Red Mule grits are paired with panko-dusted catfish and spicy tomato chutney, but South Carolina’s Anson Mills rice appears in the cooked-to-order risotto, and more grits star in a cake that accompanies a grilled Berkshire pork chop. Other Southern touches that may appear from time to time include some very old dishes, such as chicken bog, a Carolina classic of spices, rice and chicken cooked to tenderness. You’ll find field peas, house-made pickles, and Georgia’s Springer Mountain chicken. The cheese offerings include first-rate European selections as well as local choices, such as the Greendale Farms Gruyère from nearby Madison County. The wine list roams the globe and many selections are excellent values. Acheson offers a luscious Inniskillin Vidal ice wine for dessert, but avoids any of the local wines and offers one Georgia beer---Athens’ own Terrapin. Ask about the prix-fixe three-course dinners for $25. |
