Fukuda is small, but a mighty draw for lunch, dinner, cooking classes, art shows and special events. Chef/co-owner Matt Kemp and business partner Hoon Kim keep activities rolling along as they explore how best to serve their diverse market and fan base. The food is certainly Japanese, but the oft-changing menu sprawls from sushi and sashimi to a whole salt-roasted fish head and oysters with Thai chili. Smoky, grilled edamame is anointed with sea salt. Robatayaki, charcoal grilled skewers, range from chicken to duck and scallion to shiitake. Or consider the ramen, large steaming bowls of noodles with either seafood or pork belly, topped with a poached egg. The Chef’s Choice sampler of sushi and sashimi makes a good starter. On Thursdays exotic seafood arrives from Japan. It’s BYOB with a $1.50 per bottle corkage fee. Saké goes with everything.
