Former chef at the Opera House restaurant, French-born Guillaume Brahimi moved on some time back to this genteel location in leafy upmarket Paddington, an inner-eastern suburb. The delighted locals adopted him and his fine French cuisine immediately, hardly able to believe their luck in having such talent and expertise in their area, so you will need to book ahead. The menu follows Sydney’s style by spelling out the provenance of a dish’s major ingredients. Choosing from the à la carte menu (not available on Saturday evenings), there may be baby vegetables from Blackheath, NSW; sea urchin from Kiama; and Iggy’s bread with Myrtleford butter. Mains might include Hunter Valley duck with nectarine, endive and carrot; a pineapple, coconut and ginger confection is credited to Yeppoon. Better still, entrust your taste buds to Brahimi and order the dégustation, all eight courses of it, with matched wines. As befits the chef and his menu, the wine list is lengthy and packed with exciting choices. Old-world classics share the pages with new-world discoveries.
