Jim 'N Nick's Bar-B-Q Restaurant Review: The not-so-secret ingredient that turns humble swine into barbecue divine is wood, as it fires the smokers to turn pork shoulders, butt, ribs and beef brisket into barbecue. At this outpost of a Birmingham, Alabama-based chain, the pork seems to have missed contact with that important element, supposedly hickory in this case. On one visit, we found smoke lacking in the brisket, pulled pork and ribs. We like the hot links, four spicy, nicely textured and quite large sausages, served with house-made pimento cheese and saltine crackers. However, we don’t care for the too ketchup-y barbecue sauce. Good slaw, potato salad, baked beans and collards are among the sides, here called "trimmings." Classic pies comprise dessert --- go for the coconut cream. Like other locations in this chain, this one has a generous bar, but beer is the quaff of choice. The limited wine list has a few that will do well with barbecue, among them the Seghesio Zinfandel. |
